A Crock Pot Challenge from Amy...

"Hi Suzanne, I love your recipe section, but wondered if you have any favorite crock pot recipes? The only one you list is the one for your famous stuffing, but maybe you have others. With all the working moms out there reading with you, I'm sure I'm not the only one who would enjoy having some new ideas for the crock pot. But I do have to warn you that I'm not a huge fan of cream of mushroom soup, and so many crock pot recipes involve it."--Thanks! (Suzanne replies:) Amy, I love a challenge. At first I couldn't think of any and then I dug through my recipes and came up with two great dishes that I used to make, Ginger Pork and a Mediterranean Pot Roast.

Ginger Pork
(It's very good.)

2 1/2 pounds pork boneless loin roast
3 tablespoons grated ginger root
3 tablespoons honey
1/4 cup hoisin sauce
3 cups coleslaw mix
2 tablespoons rice vinegar
12 flour tortillas  (8 or 10 inch)

Remove fat from pork. Mix ginger root and honey in slow cooker. Add pork, turn to coat with honey mixture.

Cover and cook on low setting 6 to 8 hours or until pork is tender.

Remove from slow cooker. Use 2 forks to shred pork, then return to slow cooker and stir in hoisin sauce.

Toss coleslaw mix and vinegar until well mixed. Spread 1/3 cup pork mixture down center of each tortilla. Top with 1/4 cup coleslaw mixture (or to taste) and roll up tightly.
 

 
Mediterranean Pot Roast
 
3 pound boneless chuck roast
1 tsp salt
1 tablespoon Italian seasoning
1 large clove garlic, finely chopped
1/3 cup oil-packed sun-dried tomatoes, drained and chopped
1/2 cup sliced ripe olives
1/2 cup beef broth
1/2 cup frozen small whole onions (I use fresh onion slices)

Spray skillet with cooking spray. Cook beef over medium-high heat 5 minutes turning once until brown. Sprinkle meat with salt, Italian seasoning and garlic.

Put beef seasoned side up in the slow cooker. Spread tomatoes and olives over beef. Add broth and onions.

Cover and cook on low 5 to 6 hours or until beef is tender.

Remove beef, let stand for 10 to 15 minutes. Slice serve with onions and beef juice from slow cooker.
